Schachhuber Winery
Our winery in Haugsdorf has been family-owned since 1796. Today, we produce our wine using modern
equipment, yet still in keeping with tradition.
The region itself has a history of settlement dating back to prehistoric
times. Today, half of our vineyards are planted with white grape varieties and the other half with
red grape varieties.
Our credo in the vineyard and in the wine cellar is:
“To live in harmony with nature and to use nature’s resources with
care.”
Avoiding herbicides is therefore a matter of course for us; yield control and rigorous selection are
essential for quality — as is selective hand-harvesting.
It is particularly noteworthy that many of our vineyards have already reached a great age. The Riesling
vines on the Schatzberg behind our cellar are already 54 years old — the oldest vineyard in
Haugsdorf. The Pinot Blanc vines are 49 years old.
The advanced age of the vines gives the wine an incomparable density and a pronounced minerality.
As an old wisdom says: “A wine’s expressiveness is born in the
vineyard.”
Our greatest pride are the five terraced vineyards in the absolute top sites on the south side of the
Schatzberg, planted with Cabernet Sauvignon
and Merlot. These south-facing terraces provide the best conditions for a special
Cabernet Sauvignon. We always strive to harvest the grapes at their peak physiological ripeness.
The grapes are then taken to the cellar for processing. White wines are vinified in stainless steel tanks;
only the Chardonnay Barrique is aged in Allier barrique barrels.
The red wine must is fermented in tanks and then aged in old wooden barrels or new Allier barrique
barrels.
